Today’s Recipe – Gluten free !

Quinoa with Beans and Corn
4 cloves of garlic finely chopped
(or) 1 t. garlic powder
1 medium onion chopped
2 cups water
1 cup quinoa
1/4 t. cayenne powder
1 1/2 t. cumin
1/2 t. turmeric
1 t. salt
1 t. black pepper
1 1/2 T. parsley flakes
1 can black beans (rinsed and drained)
1 can fava beans (rinsed and drained)
1 can corn (rinsed and drained)
In large saucepan slightly brown garlic and onion. Add water, quinoa, cayenne, cumin, turmeric, salt and pepper. Bring to a boil then cover and simmer on low for 20 minutes. Add parsley flakes, both beans and corn and heat through stirring constantly. Serve hot or cold
